Clover honey is New Zealand's most common honey type. The South Island and Canterbury, Otago and Southland provinces in particular, are the prime areas of quality clover production. New Zealand white clover honey is light in colour with a delicate floral bouquet and flavour. It is offered in both creamed and liquid forms. The liquid form is used for sweetening drinks, baking, etc. and the thick creamy texture is popular as a spread.
